Chocolate Crème Brûlée

Method :
- Preheat oven to 130°C (Gas Mark 4-5).
- In a pan, bring milk to a boil with 1 vanilla bean, split and seeded. Remove from heat and leave to cool.
- Melt chocolate in a bowl over a pan of simmering water and let cool slightly.
- In a large bowl, whisk egg yolks with sugar until mixture is paler in colour. Using a spatula, fold in warm chocolate and Crème Fraîche Epaisse. Add cooled milk, making sure to have removed the vanilla bean, and stir.
- Pour the mixture into 4 small ramekins and bake for at least 25-30 min. The crème brûlée is cooked when it is still slightly wobbly in the middle. Allow to cool to room temperature before refrigerating.
- Just before serving, top with brown sugar and place ramekins under the oven grill for 2-3 minutes to caramelise the sugar.
Paysan Breton tip
If you prefer, milk chocolate or praline chocolate may be used instead of dark chocolate.
