No-bake red fruit cheesecake

Ingredients for :

2 people

2 glass jars (500 ml)

The cheesecake:

Breton biscuits
100 g Breton biscuits
UHT Cream 30%
12.5 cl UHT Cream 30%
Icing sugar
30 g Icing sugar
Lemon juice
1 Dessert spoon Lemon juice
Vanilla extract
1 Teaspoon Vanilla extract

The topping:

Red berry coulis
50 cl Red berry coulis
Red berries
50 g Red berries

Method :

  1. The evening before or 6 hours before, start preparing the cheesecake.
  2. In a bowl, mix the Breton biscuits (crumbled) with the soft butter (melted).
  3. Place the mixture in the bottom of a jar and press down to form an even, compact layer.
  4. In a separate bowl, mix the whipped cheese with the powdered sugar, lemon juice and vanilla extract.
  5. In a food processor or with an electric mixer, whip the whole cream until it resembles whipped cream, then gently fold it into the previous mixture.
  6. Pour the mixture over the cookie layer and smooth out.
  7. Refrigerate for at least 6 hours or overnight.
  8. Before serving, garnish with red fruit coulis and red fruit of your choice.
