The cheesecake:

Breton biscuits

UHT Cream 30%

The topping:

Method :
- The evening before or 6 hours before, start preparing the cheesecake.
- In a bowl, mix the Breton biscuits (crumbled) with the soft butter (melted).
- Place the mixture in the bottom of a jar and press down to form an even, compact layer.
- In a separate bowl, mix the whipped cheese with the powdered sugar, lemon juice and vanilla extract.
- In a food processor or with an electric mixer, whip the whole cream until it resembles whipped cream, then gently fold it into the previous mixture.
- Pour the mixture over the cookie layer and smooth out.
- Refrigerate for at least 6 hours or overnight.
- Before serving, garnish with red fruit coulis and red fruit of your choice.
