Christmas Chocolate and Chai Tea Truffles

Ingredients for :

4 people
Dark chocolate
100 g Dark chocolates
Chai tea
1 Teaspoon Chai tea
UHT Cream 30%
7.5 cl UHT Cream 30%
Honey
1 Teaspoon Honey
Cocoa powder
20 g Cocoa powder

Method :

  1. Break the chocolate into pieces and place them in a bowl.
  2. Heat the cream without bringing it to a boil, then add the tea and let it steep for about 10 minutes before removing it. Add the honey, then gently reheat the cream.
  3. Pour the cream over the chocolate and let it sit for 1 minute. Stir well until smooth. Add the butter in small pieces and mix thoroughly.
  4. Let the mixture rest at room temperature until it thickens enough to be piped.
  5. Using a piping bag, pipe small truffles onto a baking sheet lined with parchment paper.
  6. Chill in the fridge for a few hours, then roll the truffles in cocoa powder.
  7. Store in the refrigerator and take them out 30 minutes before serving.
