Christmas Chocolate and Chai Tea Truffles

UHT Cream 30%

Cocoa powder
Method :
- Break the chocolate into pieces and place them in a bowl.
- Heat the cream without bringing it to a boil, then add the tea and let it steep for about 10 minutes before removing it. Add the honey, then gently reheat the cream.
- Pour the cream over the chocolate and let it sit for 1 minute. Stir well until smooth. Add the butter in small pieces and mix thoroughly.
- Let the mixture rest at room temperature until it thickens enough to be piped.
- Using a piping bag, pipe small truffles onto a baking sheet lined with parchment paper.
- Chill in the fridge for a few hours, then roll the truffles in cocoa powder.
- Store in the refrigerator and take them out 30 minutes before serving.
