Savory Crumble

Ingredients for :

4 people

2 Terrines Le Parfait®- Familia Wiss (500 g)

For the crumble topping:

Flour
200 g Flour
Buckwheat flour
30 g Buckwheat flour
Pumpkin seed
40 g Pumpkin seeds
Pepper
1 Pinch Pepper

For the filling:

Butternut squash
600 Units Butternut squash
Cooked Chestnuts
100 g Cooked Chestnuts
Onion
1 Unit Onion
Four-spice mix
10 g Four-spice mix
Salt, pepper
1 Pinch Salt, pepper

Method :

  1. Peel, deseed, and cut the butternut squash into small pieces. Pre-cook it by steaming (or boiling) until the flesh starts to soften.
  2. Peel and finely slice the onion, then sauté it in a pan with a little butter until it becomes slightly caramelized.
  3. In a mixing bowl, combine the butternut squash, onion, crushed cooked chestnuts, four-spice mix, salt, and pepper.
  4. In another bowl, mix the flours, semi-salted butter, grated Emmental, crushed pumpkin seeds, and black pepper with your fingertips until you obtain a crumbly dough with small chunks.
  5. In a Terrine Familia Wiss Le Parfait® jar, place the filling at the bottom and cover with the crumble mixture.
  6. Bake for about 30 minutes at 180°C (350°F) until the crumble topping is golden brown. Serve warm and enjoy!
