Zucchini and Salmon Waffles

Ingredients for :

4 people
Zucchini
1 Unit Zucchini
Smoked salmon
4 Slices Smoked salmon
Egg
2 Units Eggs
Flour
300 g Flour
UHT Cream 30%
20 cl UHT Cream 30%
Milk
20 cl Milk
Baking powder
1 Bag Baking powder
Menthe
2 Sheets Menthe
Espelette pepper
1 Teaspoon Espelette pepper
Rocket
3 Handfuls Rocket
Chives
1 Sprig Chives
Salt, pepper
1 Pinch Salt, pepper

Method :

  1. Coarsely grate the zucchini (using a coarse grater).
  2. Place the grated zucchini in a colander, salt it, and let it drain for about 1 hour.
  3. To remove the excess moisture from the zucchini, wrap it in a clean, dry cloth and press firmly.
  4. In a bowl, beat the eggs, cream, milk, melted butter, and Fromage Fouetté until the mixture is smooth and well combined.
  5. Add the flour, baking powder, salt, pepper, and Espelette pepper.
  6. Crumble the zucchini, add the chopped mint, and mix well.
  7. Cook the batter in a waffle maker.
  8. Serve the hot waffles with arugula, smoked salmon, whipped cheese, and some chives.

You can enjoy your waffles with any topping of your choice (eggs, tomatoes, avocado, etc.).
