Method :
- Coarsely grate the zucchini (using a coarse grater).
- Place the grated zucchini in a colander, salt it, and let it drain for about 1 hour.
- To remove the excess moisture from the zucchini, wrap it in a clean, dry cloth and press firmly.
- In a bowl, beat the eggs, cream, milk, melted butter, and Fromage Fouetté until the mixture is smooth and well combined.
- Add the flour, baking powder, salt, pepper, and Espelette pepper.
- Crumble the zucchini, add the chopped mint, and mix well.
- Cook the batter in a waffle maker.
- Serve the hot waffles with arugula, smoked salmon, whipped cheese, and some chives.
