Method :
- Remove Moulded Butter with Guérande Salt Crystals from refrigerator 1 hour before use.
- In a bowl, mash 50g of Butter with Guérande Salt Crystals with a fork until soft, cut the rocket and fold it into the butter, mix together until combined. Refrigerate.
- Peel, wash and boil potatoes in salted water. Drain. Mash potatoes and fold in the rocket butter. Stir and keep warm.
- Cook pork chops 7-8 minutes in a frying pan with a bit of butter. Skim excess fat and deglaze pan with soy sauce and honey. Continue cooking the pork chops until they are nicely caramelised.
- Serve with the rocket mashed potatoes. Add a knob of butter with salt crystals to the rocket mashed potatoes.
Paysan Breton tip
You can marinade the pork chops in a mixture of honey, soy sauce and 4 spice mix for 1 hour and use the marinade to caramelize the pork chops.
