Courgette, Tomato and Baguette Cheese Tartlet

Ingredients for :

4 people
Shortcrust pastry
1 Unit Shortcrust pastry
Tomato
3 Units Tomatoes
Zucchini
2 Units Zucchinis

Pour la marinade

Olive oil
2 Dessert spoons Olive oil
Garlic
2 Cloves Garlic
Salt, pepper
Pinches Salt, pepper
Basil
1 Sheet Basil

Method :

  1. Preheat oven to 200°C (Gas Mark 7).
  2. Cut shortbread pastry shell and place in 4 tartlet tins.
  3. Prepare the marinade: wash and chop basil. Peel, remove germ from garlic and chop. In a bowl, combine basil, garlic and seasoning. Add oil and stir.
  4. Wash and cut tomatoes into thin slices.
  5. Wash and thinly slice courgettes.
  6. Cut Baguette cheese into thin slices.
  7. Alternate layers of vegetables and cheese in each tin. Brush with marinade. Bake in oven for 15 minutes.
  8. Serve hot.

Paysan Breton tip

Serve this tartlet with a mixed green salad topped with toasted pine nuts.
