Method :
- Peel and finely chop the garlic and 5g of ginger.
- Cook the noodles according to package instructions, reserving 3 tablespoons of cooking water. Drain and rinse under cold water to stop cooking. Set aside.
- In a medium bowl, combine the sesame paste and crème fraîche. Gradually add the soy sauce, vinegar, sesame oil, sugar and noodle water, mixing well after each addition.
- Add garlic and grated ginger.
- Pour sauce over cooled pasta and toss to coat.
- Serve the noodles garnished with green onions and sesame seeds.
Paysan Breton tip
You can add 1/2 teaspoon of chili flakes to spice up the recipe.
