Brie and Seasonal Vegetable Flan

Method :
- Prepare vegetables: peel and wash asparagus, cut into sections (keep 4 tips for garnish). Shell and wash peas, cook in boiling water with coarse salt. Cool in a bowl of ice water.
- Preheat the oven to 150°C (Gas Mark 5).
- In a blender, blend peas, asparagus and cream.
- Crack eggs in a bowl and whisk, add the contents of the blender and the milk. Season. Add 100 g Label Rouge Brie cheese cut into pieces. Stir and divide among the buttered ramekins. Top with a few pieces of the remaining Brie cheese, cook in a water bath in the oven for approximately 30 minutes.
- Serve garnished with asparagus tips!

Serve this flan with a green salad topped with dried duck breast slices.
