Method :
- Preheat oven to 180°C (Gas Mark 6-7).
- In a food processor, finely crush crackers. Transfer to a large bowl, fold in melted butter and water. Mix together.
- Line bottom of an 18-20 cm springform tin with the mixture, which should be a bit sticky, about 1 cm thick and be sure to smooth out the top. Bake 8-10 minutes until biscuit turns slightly golden brown. Remove from oven and let cool to room temperature.
- Soften gelatin sheets in cold water.
- In a pan, slowly heat single cream and Madame Loïk Shallot & Chive Whipped Cheese, do not boil. Incorporate drained gelatin sheets and stir. Add egg, finely chopped chives, salt and pepper and stir.
- Pour mixture over the cooled biscuit. Refrigerate immediately for at least 3 hours before serving with a mixed green salad.
Paysan Breton tip
This recipe can be made in individual portions. In that case use 7-8 cm circles or mini springform tins to make the recipe.
